Tuscan Pesto Chicken & Mushroom Delight

Ingredients:
Chicken or turkey breast, 200 g
Italian seasoning
Buckwheat pasta, 60 g (buckwheat is naturally gluten-free, but do not confuse it with wheat, which contains gluten)
Pasta water, 2-3 tbsp.
Capers, 1 tbsp.
Favorite mushrooms, 2 handfuls
Spinach, 1 handful
Red pesto, 1 tbsp.
Instructions:
Season the sliced chicken or turkey with Italian seasoning. Steam or bake mushrooms for 5 minutes, then add the meat and cook until golden. In the last minute, stir in the spinach. Meanwhile, cook buckwheat pasta and reserve 2-3 tbsp of pasta water. Mix the pasta with red pesto, capers, and the reserved water, then combine everything in the pan. Serve warm and enjoy!
