Spinach & Avocado Omelet


Ingredients:

  • Coconut oil, 1 tbsp.

  • Large egg, 1

  • Egg white liquid, 125 ml

  • Spinach, 1 handful

  • Avocado, 1/4

  • Lemon wedge

  • Spices: black pepper, Italian seasoning, smoked pepper



Serve with:

  • Wholegrain or gluten-free bread, 2 slices (80-100 g) OR

  • Wholegrain or gluten-free wrap, 2 (each 42 g)


Instructions:

Heat 1 tbsp coconut oil in a pan over medium heat. Whisk the egg, egg whites, black pepper, Italian seasoning, and smoked pepper until combined. Pour the mixture into the pan, then add spinach evenly on top. Cook until the omelet is set, then gently fold it in half. Serve with sliced avocado, a squeeze of fresh lemon, and your choice of wholegrain or gluten-free bread or wraps.
