Lentil Rice, Fresh Herbs & Olives

Ingredients:

  • Red lentil rice OR red lentil pasta, 80 g (lentil rice and pasta are naturally gluten-free)

  • Fresh spinach, 1 handful

  • Garlic, 1-2 cloves

  • (Pepper infused) olive oil, 1 tbsp.

  • Fresh herbs (parsley / coriander, basil), finely chopped,1 handful

  • Olives in brine, 2 tbsp.

  • Optional (Pesto / sorrel, 1 tbsp OR olives brine, 1-2 tbsp.)


Instructions:

Cook lentil rice (or pasta) as per the package instructions. Set aside.

Heat olive oil in a frying pan, add pressed garlic and spinach, and sauté for 30 seconds until wilted. Remove from heat.

Finely chop the fresh herbs.

Mix the cooked rice with pesto (or sorrel or olive brine), sautéed spinach, fresh herbs, and chopped olives.
