Home-Made Beetroot Hummus



Ingredients:

 

Beetroot, 1 big

Chickpeas, 1 can

Juice of 1/2 lemon

Garlic, 2 cloves

Tahini, 3 tbsp.

Salt and pepper, to taste

 

Instructions:

 

Preheat the oven to 150 degrees.

Wash and wrap the beetroot in foil, then bake for 1.5 hours or until tender.

Once the beetroot is cooled, peel and chop it into chunks.

In a food processor, combine the cooked beetroot, chickpeas, lemon juice, garlic, tahini, salt, and pepper.

Blend until smooth, scraping down the sides as needed.

 


Tip: You can bake the beetroot the day before cooking hummus.
